  1. 2 tablespoons coconut oil
  2. 1 onion diced
  3. 1 teaspoon cumin seeds or 1/2 tsp cumin powder
  4. 1/2 teaspoon coriander powder or seeds
  5. 1 tablespoon curry powder I use mild
  6. 2 cups red lentils soaked for at least 2 hours, I normally do it overnight, rinsed and drained
  7. 2 water + cups
  8. 1 can coconut milk 400ml, 14 oz
  9. 1 cup raw cashews
  10. 1 can tomatoes 400gr, 14 oz
  11. 1 tablespoon garlic powder
  12. salt to taste
  13. chilli powder or cayenne pepper to taste, optional
