  1. 2 tablespoons olive oil
  2. 1 small red onion, finely chopped
  3. 1 chorizo sausage, finely chopped
  4. 400g pork mince
  5. 1 egg, lightly beaten
  6. 1 cup fresh breadcrumbs
  7. 2 garlic cloves, crushed
  8. 1/2 teaspoon smoked paprika
  9. 1/2 cup finely chopped fresh flat-leaf parsley leaves
  10. Roasted capsicum dip, to serve

The instruction how to make Pork and chorizo meatballs

  1. Heat 2 teaspoons oil in a large frying pan over medium-high heat. Cook onion and chorizo for 5 minutes, stirring occasionally, or until onion has softened. Cool for 2 minutes.
  2. Combine mince, egg, breadcrumbs, garlic, paprika, parsley and chorizo mixture in a bowl. Season with salt and pepper. Mix to combine. Roll level tablespoons of mixture into balls. Place on a plate.
  3. Heat remaining oil in a large frying pan over medium-high heat. Cook meatballs, turning, for 5 to 7 minutes or until browned and cooked through. Serve with dip.
