  1. 2 cups white sugar
  2. 1 cup water
  3. 2 sticks lemongrass, trimmed, sliced
  4. 5 cardamom pods, bruised
  5. 4 white peaches
  6. 1/2 cup sago
  7. 2 cups coconut milk
  8. 1/3 cup caster sugar

The instruction how to make White peaches in lemongrass and cardamom syrup

  1. Combine sugar, water, lemongrass and cardamom pods in a large, deep saucepan. Stir over a low heat until sugar has dissolved and mixture comes to the boil. Add peaches to saucepan and cover. Simmer for 8 minutes. Turn peaches and simmer for a further 5-8 minutes or until tender. Transfer peaches to a large bowl. Pour over syrup and set aside to cool.
  2. Combine sago and coconut milk in a saucepan. Stand for 30 minutes to allow sago pods to soften. Place saucepan over medium heat and bring to the boil, stirring occasionally. Reduce heat and cook, stirring often, for 25 minutes or until sago is tender. Remove from heat and stir through sugar. Serve immediately with peaches.
