- 2 tablespoons olive oil ghee, or bacon grease, obviously not the Israeli choice!
- 1 onion medium, peeled and diced
- 3 cloves garlic peeled and thinly sliced
- 1/2 chile pepper stemmed, sliced in half and deseeded, finely diced/minced, I actually substituted some dried aleppo chile flakes
- 1 1/2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika or sweet you can substitute sweet
- 1 teaspoon caraway seeds crushed
- 1 teaspoon cumin seeds
- 3/4 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 28 ounces crushed tomatoes or of diced, you can also use freshu2013 highly recommended when theyu2019re in seasonu2013 but cooking time will be au2026
- 2 tablespoons tomato paste
- 2 teaspoons honey
- 1 teaspoon red wine or cider vinegar
- 1 cup greens loosely packed, roughly chopped, u2013 I used tatsoi this time
- 4 ounces feta cheese about 1 cup, 115g, cut in generous, bite-sized cubes, optional
- 6 eggs
- fresh parsley a small bunch chopped, cilantro would also be good
