- 2 x 400ml cans coconut milk
- 1 cup caster sugar

- Combine coconut milk and caster sugar in a large, heavy-based saucepan over medium heat. Cook, stirring often, for 8 minutes until sugar has dissolved and mixture comes to a simmer.
- Reduce heat to medium-low. Simmer, stirring often, for 40 minutes or until mixture thickens and coats the back of a wooden spoon (mixture should resemble thick custard). Remove from heat. Allow to cool. Transfer to an airtight container.
